Overnight harvest of each variety at optimum ripeness.
Pre-fermentation maceration at low temperature (to obtain more color and varietal aromas without extracting vegetal tannins).
Fermentation of the varieties separately at controlled temperature to enhance the freshness and frankness of the varietal aromas.
